Menu Plan for September 25-30, 2006


The last week of the month and we are down to the basics this week... We get paid on Friday and I will be stocking FRESH fruits and veggies once again for meals next week. I HOPE spinach is back by next week because I am having WITHDRAWALS!!! LOL

Monday:
Texas Golden Chicken (recipe below)
(from my First Place Favorites Cookbook -
the old one is out of print but here is the New one)
served with mashed potatoes or baked fries
mixed veggies
whole wheat bread
pears

Tuesday:
poached Salmon
lemon/thyme quinoa
spinach (made from frozen)
mixed fruit
wheat rolls

Wednesday:
Lentil taco bake (with tomatoes, chiles and cheese)
this is a Blestwithsons special!!!
whole wheat (homemade) tortillas
salsa

Thursday:
Curried Chicken
brown rice
Indian flat bread (Naan)
brussel sprouts

Friday:
Tortilla soup
cornbread
there will be dessert but not sure until I get there this week...

Saturday:
C.O.R.D.
(Clean Out Refrigerator Day)

Sunday is Church Dinner
so I will be cooking but not sure what yet


Texas Golden Chicken

8 chicken legs, skinned
2 Tbsp. orange juice concentrate
6 Tbsp. seasoned bread crumbs
(I make my own to get rid of salt)
1/2 tsp. salt
1/8 tsp black pepper
1/2 tsp paprika
1/8 tsp. cayenne pepper

To prepare:
1. Puncture drumsticks with a fork and
brush with orange juice concentrate

2. Spray a non-stick jelly-roll pan with cooking spray

3. Combine bread crumbs, salt, black pepper,
paprika and cayenne pepper in a plastic bag;
add chicken and shake well to coat lightly.

4. Arrange chicken in a single layer in pan.

5. Bake, without turning, at 450 degrees for
30 minutes or until crisp and golden brown.
Blot with paper towel for extra crispness.

Best served at once.

Says it serves 4 but in my house it serves 6 because the little ones only eat one each.
