Menu Plan for October 9-14, 2006

So I got inspired and posted it tonight instead... LOL


Monday:
Chicken in the crockpot
carrots
broccoli
brown rice
fruit salad


Tuesday:
Trout
roasted potatoes
asparagus
quinoa


Wednesday:
I am working the dinner at school
and Dan will make hotdogs for kids at the
ballgame on a little campstove or grill

Thursday:
Turkey Pot Pie (see below)
w/mixed veggies inside
fruit or side salad
dinner rolls

Friday:
Vegetable/Beef Stew
cornbread muffins

Saturday:
leftovers

Very Easy Turkey Pot Pie

2 purchased pie crusts
(or you can make your own but then it won't be easy anymore... ;) )
1/2 bag frozen mixed vegetables thawed
about 2 cups cooked and chopped turkey
(can use chicken or beef, too)
1 can cream mushroom soup
1 can cream chicken soup
1/2 cup milk or cream

Mix all veggies, soups, milk and meat in a large bowl. Pour the mixture into pie crust that you have placed into a pie pan (or the ones that come already in the pie pan) and then cover with the other pie crust and cut little holes in the center in a cross or x shape to let steam escape. If you are using the pie crusts that come in the foil pie pans then just turn the second one upside down onto the filled crust and cook that way. Bake it for about 45 minutes in 350 degree oven. Remove foil from top if using those pie crusts I described that come in the tins and let it brown for about 10 to 15 minutes. The other kind should already be golden brown and ready to pull out. Let it cool for a bit and then cut into pie slices to serve. I usually serve this with a side salad, bread and tea.

Note: sometimes I make my own quick crust and top the pot pie with mashed potatoes for a Shepherd's pie version or will top with biscuits for a change of pace.

  2. I'd like the Vegetable Beef Stew recipe also! I love this time of year...when it's getting cool enough for soups and stews. I can't hardly eat them in the summer! lol!!
