Turkey Meatloaf...

1 or 2 eggs (depending on how moist you like)
1/3 cup rolled oats
1/3 cup tomato sauce or a can of diced tomatoes with liquid drained
1/2 teaspoon salt and a dash of pepper
1 1/2 pounds ground turkey
1/2 cup finely chopped onion
1/4 cup finely chopped bell pepper
(can add chopped chiles for more kick if you like)
Catsup to top it with

I mix all the ingredients except the catsup and put it into a loaf pan then I top it with the catsup and cook it on 350 degrees for about an hour or a little more if needed. I usually serve this with mashed or roasted potatoes and sauteed greenbeans for a very comfort food/familiar food good for you meal. The ground turkey lowers the fat and sauteeing the fresh green beans retains most of it's nutritional content. The roasted potatoes are better for you than the mashed and I use a bit of olive oil and some thyme on the potatoes before I put them into the oven to cook.
