I am starched out...

Over the past few weeks we have been cooking starches in class. We have made the following...

* rice - pilaf, steamed, risotto, and croquettes
* potatoes - mashed, creamed, fantailed, croquettes, fries, country, hashed, chips...
* pasta - basic, both savory and sweet, stuffed, shaped, gnocchi, spaetzle...

It has been quite a delicious adventure. I am making more and more of my own things at home and playing with all I am learning.

We still have fabricating chicken to learn. Chef was going to do that last week but things got hectic. We had a dinner last night at the college and I ran the cold station again. Chef is letting go more each time and letting me lead. I really like that... It is so hilarious to be working with kids that are only five years older than my oldest boy. LOL They are all so young... ;) (except for my friend YoungJa - who is 60). There is a lot to be said for life experience, though. I am so glad I am not that young anymore. I am old and stable and married with kids and that makes a WORLD OF DIFFERENCE as far as stability and work ethic compared to these kids who are still living at home. ;)

There are more that are older in the program than I thought and that has been encouraging for me. We were called out last night after dinner service for the customers to meet us. We had to give our name and a bit about ourselves because it was people who support the program and they wanted to see who was there. I told them about me being almost 40 and doing what I really love now and I got a huge applause. I had two ladies come up to me after the event and tell me that they always wanted to go to cooking school but their kids told them they were being silly. I am so glad my family never told me that! I told them they could do this and that I love what I am doing now more than anything I have ever done (except being a wife and mom). I wish everyone could do what they love. I think the world would be a much happier place for it...

On tap this weekend...

Hoping to get some bread recipes up and I will be cooking a turkey that my FIL brought me the other day. I LOVE WEEKEND COOKING!!!

  1. I think it's incredible that you are going to cooking school! Age matters not..it's all about doing what you like and making your own path in life :)

  2. HAHAHAHA, i can remember when I starched out. Now I am at the point where I can't see anymore protein ;)
