Menu Plan for January 15-21, 2007


Finally getting around to menu planning again... I start back to school this week so I need the organization. Don't forget to check other menu plans for the week at OrgJunkie.blogspot.com

Salad and bread

Leftovers

Sunday
Soup and sandwich night or leftovers

I also made breakfast and lunch plans because I am eating to lose weight right now and need the structure for each day. I am certainly open to change but here is the tentative...

Monday
Grapefruit
Cheesy corn and green chili grits
Trout (from our summer fishing trip 2006)
&
Sandwiches for lunch


Tuesday

Scrambled egg
Whole grain toast
Blueberry fruit spread
&
Green chili and corn chowder
salad

Wednesday

Yogurt
Strawberries
Homemade Granola
&
Black bean
Avocado
Cheese
Tomato
Wrapped in lettuce leaf

Thursday

Omelet
Toast and
blueberry spread
&
Stir-fry chicken
and veggies
with soba noodles


Friday

Oats cooked in apple juice
with cinnamon and nutmeg
Walnuts
&
Lentils and rice with
whole wheat tortillas
and cheese
Side salad


Saturday

Dan makes pancakes for kids
and I eat grapefruit
and cereal of some kind
&
whatever the family wants
probably pizza...

Sunday

Peanut butter toast
and fruit juice
&
Lunch at MIL's house

  11. Great menu! I am posting the bf and lunch too -- also trying to lose weight. 11 pounds so far! yay!

    I wanted to ask about the quinoa -- what is it most like texture and taste-wise? Is it more like a rice or couscous? I've been meaning to try it and haven't had the nerve!

    Sherry, quinoa is very much like couscous and is cooked like rice. It is a 2 to 1 ratio of water to grain. I add things like nuts, seeds, herbs and such while cooking and add a dash of salt and pepper to finish. It is good with a hint of orange juice and zest, too. You can be as creative as you want with it.
