Menu Plan - June 25-30, 2007

I am getting back to normal menu planning this week again. We got out of it because Dan had been away for two weeks and the kids just don't want to eat like I cook when Dan is here. Oh, they eat healthy but we eat more "kid friendly" food when Dan is gone. I usually fix myself a big salad or eat some vegetarian something or another but that is usually quick fix food and I keep things in the fridge to do it with as little effort as possible. ...but when Dan is home... I cook much more gourmet and diet friendly. We also have things coming ripe in the garden so there is summer bounty to eat, too. I LOVE SUMMER BOUNTY!!!!! That being said...
Here is the week's worth of menus...

Tilapia sauteed in the skillet
brown rice
freshly picked zucchini
freshly picked peaches peeled and sliced

Spaghetti with meat sauce
steamed broccoli
fresh plums cut up
bread sticks

Chili Relleno Casserole
Fresh Pico de Gallo made from garden stuff
Maybe some homemade Guacamole, too

Sandwiches (Boy Scout Court of Honor Night)
Dessert with the Scouts

Grilled Salmon
Grilled Zucchini and Yellow Squash
Oven roasted potatoes
Plum Cake

Cooking out on the grill
Burgers and Dogs

We eat a lot of grilled stuff in the summer because we don't want to heat the house up too much.

Sandwiches for lunch and church cookout for dinner.
