Zucchini Fritters and Red Pepper Sauce...

I did roast my own bell peppers. NOT hard, btw... I use my really dirty (as you can see) stovetop burners. LOL I had some blueberry syrup spill over a few days ago and I have just been putting off cleaning it. It will get cleaned very soon...

I roast them and then put them in a paper or plastic baggie for a bit and then they are really easy to peel. I take the stem and seeds out and use the rest. Do NOT run it under water to clean but just rub it with a paper towel to retain all the great flavor.

Fry in olive oil...

Here is the sauce...

Done and ready to eat! We have NO leftovers... LOL
