Summer Treats

 I have been enjoying fresh lemonade and Limeade recently.  I make it fresh and there is no comparison between the real thing and the powder mixes.

I have been making it as follows...

about 1/4 cup to 1/2 cup of fresh lemon or lime juice
a sugar syrup made with 1 cup sugar and 1 cup water
bring sugar syrup to a boil and cook just until sugar is dissolved completely.
Once sugar syrup is made you can add it to the juice and then add filtered or tap water until container is filled to top.  Adjust to your taste by adding more juice or sugar syrup until it is how you like it.  
This recipe makes about a quart and a half of lemon or limeade.


 There is just NOTHING like freshly grown tomatoes from your own garden... NOTHING!
I simply sliced these and added Parmesan cheese.  If you have basil you can do a quick Chiffonade and sprinkle it over the top of the tomatoes, too.

 The color on these tomatoes is a gorgeous pinkish red!  SO full of flavor.

 We had Chili Relleno Casserole with chilis we had stored in the freezer from last August.  
I love garden food so much!  
For this particular recipe I added corn with an ulterior motive.  The chilis are very hot so I wanted to give a little more substance to spread out the heat.  The corn served it's purpose well as did the extra rice I served alongside.  It was a great comfort food meal for us.  :)
