GF... Cup for Cup

I made a red velvet cake for my oldest boy's birthday today and so I took the same recipe (from Nigella Lawson) and made a gluten free version using rice flour instead of regular flour.  I used exact measurement cup for cup to see how it would work.  With the rice flour blend I used I added about 1/2 tsp of xanthan gum for texture's sake.  It worked and I got to eat cake... and it was delicious!
